Wine was grown, fermented, and bottled on the West side of Cayuga Lake in the Finger Lakes of NY. Bottled into secondary fermentation in March of 2022. Wine is un-disgorged and currently without a dosage. Custom disgorging services are available with a separate arrangement. Bottled in high quality 750ml 900g sparkling bottle with heavy punt. Amber glass, with 29mm closure. Fermented to approximately 3.5 volumes of pressure. Stored in a conditioned, bonded wine facility. We are very pleased with tasting trials of this wine and it is free of faults. Dry, crisp, stony, aromatic rose. Numbers -- 11.8% alc, 6.9g/L TA, 3.33pH, 0.28g/L VA, 1.25g/L malic, 1.7g/L glu/fru. A little more body than the alc might suggest, but still a quaffer. Picked early; i.e., not a saignee. A mix of barrel and tank ferments. 10% each of chard and viognier. Malo blocked. Isinglass fined. Sterile filtered. Bottled in flint Burgundy and unbranded Trefinos (agglomerated, supercritical CO2 treated, compare to DIAM) corked. No capsules. Plain white boxes. Pickup on Treasure Island. 270 cases. $72/cs. Hand-distilled on an antique cognac pot still from premium French Colombard grown in Mendocino County's Potter & Redwood Valleys, and Viognier grown in the Ukiah Valley along the Russian River. ABV ranges from 69.6% - 72.8%. FC distillate is stored in neutral Limousin oak cognac barrels. Viognier currently available both in neutral oak & unoaked.
